Chinese Style Cold Noodles

1 pkg Spaghetti Noodles
1 - 1 1/2 cups Cooked Shredded Chicken
1 Cucumber
1 Carrot
2 Green Onions
3 - 5 pieces Whole garlic
2 - 3 cups Spinach
6 slices Ginger

 

Light soy sauce

3/4 cup Oil (any kind)
  Salt ( as desired)
1 tsp Sugar
1 tsp Vinegar
  Sesame Oil  (very little)

OPTIONAL

 Chili oil to make hot if you wish.  (Add very little) 

 

  1. Cook Noodles and place in iced water to cool down.  Drain and place noodles in large pan.

  2. Cut spinach to 4 inches long and put in boiling water for 1 minute.  Remove and cool down.  Try to squeeze most of the water out of the spinach.  

  3. Cut cucumber, carrot and green onion into this strips

  4. Smash garlic and ginger

  5. Shred chicken or cut into strips

  6. Mix everything together in a large bowl with the noodles

  7. Heat oil in a small pan and pout over the mixture

  8. Add soy sauce, salt, vinegar, sugar, sesame oil and (also chili oil if using)

  9. Mix everything together and taste before serving.  IF you feel you need more salt just add some more soy sauce.
