Chocolate Lava Cake

3-1oz squares semisweet chocolate cut in pieces

1/2 cup REAL Mayonnaise (Best Foods or Hellmanns)

1/2 cup sugar

6 Tbsp All-purpose flour

2 large eggs

1/4 cup Vanilla Extract

Confectioners Sugar

 

  1. Line bottom of 4-4oz custard cups or ceramic baking dishes approximately 3 3/4" Diameter, 1 5/8" deep, with a round piece of waxed paper, then grease and set aside.

  2. Microwave chocolate at high for 45 seconds or until melted.  Add Mayonnaise and stir until smooth.  With whisk, beat in sugar and flour,then eggs and vanilla.  Evenly spoon into cups and refrigerate about 1 hour.

  3. Preheat Oven to 425º.  On baking sheet, arrange dishes evenly so they do not touch.  Bake 13 minutes or until edges are firm but centers are slightly soft.  (DO NOT OVER-BAKE).  On wire rack, cool for 5 minutes.

  4. Carefully run a sharp knife around the edges to loosen.  Un-mold cake onto serving plates.  Remove waxed paper from bottom.  Sprinkle with powder sugar and serve immediately.  

The mayo is the secret to keeping this moist.
