Inside Outside Manicotti     (can be made without meat)

1 Tbsp  Vegetable Oil
1/3 cup Chopped onions
1/2 tsp Minced garlic
1 (28 oz) can Crushed tomatoes
1 (6 oz) can Tomato paste
1 tsp Dried basil leaves
1 tsp Ground nutmeg
1 tsp Salt (2x 1/2 tsp)
1 (15 oz) Part skim ricotta cheese
8 oz Part skim mozzarella cheese (grated)
1 large Egg
1/8 tsp  Pepper
1/2 lb  Ground beef
8 oz  Zita or elbow noodles (cooked and drained)

 

  1. In large saucepan heat oil and add onions & garlic and cook until translucent stirring constantly.

  2. Stir in tomatoes, tomato paste, basil & 1/2 tsp salt and bring to boil.  Reduce heat, cover and cook on low and simmer 20 minutes stirring occasionally.

  3. Cook ground beef and drain and add to sauce mixture.

  4. In another bowl mix cheeses, egg, pepper, nutmeg, and the rest of the salt. 

  5. In a 2 quart casserole spread 1 cup sauce layer, 1/2 noodles, spread 1/2 of the cheese and repeat layers.

  6. Bake at 350 degrees 20 to 25 minutes or until cheese is melted and sauce is bubbly.
