Filled Mini Cupcakes

1 box of chocolate cake mix (mix according to directions)

Can of chocolate icing

Filling (beat ingredients together)

8 oz cream cheese                                           

1/3 cup sugar                                                  

1 egg

Dash of salt

Stir in 6 oz bag of chocolate chips

 

  1. Using mini cupcake tins -line with mini paper liners

  2. Fill liners 1/2 full with cake mix

  3. Add 1 tsp filling mix into center of cake mix and gently push into cake mix.

  4. Bake at 350º 18-20 minutes 

  5. Cool and ice with frosting.  To make frosting easier to spread add a little milk to frosting and stir.  

  6. Top with Jimmies if desired.
Makes about 90.  IF freezing for later use - do not top with icing.  Ice when serving.
