Pork Tenderloin &
Sweet Potatoes 

1 (12 oz) Pork Tenderloin
1 large Onion cut into wedges
1 Tbsp Cooking oil 
2 (10oz ) or        1 (16oz) pkg Frozen Candied Sweet Potatoes with Sauce Thawed
1 Tbsp  Fresh Thyme (or 1/2 tsp dried crushed thyme)

HINT:

To reduce calories use fresh sweet potatoes and candy them according to you taste with brown sugar  

 

  1. Cut Tenderloin into 1/2 inch thinks slices.  

  2. In a large skillet cook pork slices and onion in hot oil about 6 minutes or until pork is tender and juices run clear, (turning slices only once

  3. Remove pork slices from Skillet and set aside

  4. Add sweet potatoes and (if dried thyme is being used) stir in dry thyme into skillet and bring to boiling and reduce heat.

  5. Cover and cook over medium heat about 10 minutes or until sweet potatoes are tender.

  6. Return pork slices to skillet and heat thoroughly.

  7. If using fresh thyme you will add it now and stir in to sweet potato mix

Serves 4 and about 25 minutes from start to finish.
