Layered Mexican Dip 

     15 oz. can of fat-free refried beans
     3 medium avocados, preferably Hass variety
     1/4 tsp. salt
     2 TBSP lemon juice
     1 c. sour cream (use fat-free sour cream if you like – it tastes fine in this recipe)
     1/2 package of reduced-sodium taco, burrito, or fajita seasoning mix
     1/2 c. shredded 2% sharp cheddar cheese   

     3 tomatoes, seeded, chopped, and patted dry with paper towels
     3 green onions, sliced
     small can of sliced black olive, drained   

 

Spread beans evenly over bottom of a 9 X 13-inch glass baking dish or a medium-size glass bowl.  Mash the avocado, salt and lemon juice together in a small bowl. Spread avocado mixture over the beans.  Mix sour cream and seasoning and spread over the avocado mixture.  Layer remaining ingredients on top in the order listed.  Serve immediately with corn chips and fresh vegetables for dipping, or chill until ready to use.
