Turkey or Chicken Croquette's

 

CROQUETTE'S INGREDIENTS

2 cups  Cooked Turkey or Chicken (ground in food processor)
1 tsp Instant chicken bouillon
1/3 cup Boiling Water
1 Tbsp Finely chopped green pepper
1 Tbsp Chopped Onions
3 Tbsp Margarine or butter
1/4 cup Flour
1/3 cup Milk
1 Tbsp Parsley (flakes or fresh chopped)
1 tsp  Lemon juice
3/4 cup (or more) Fine bread crumbs
Egg (beaten together with 2 Tbsp water)
  Oil for Frying
 

WHITE SAUCE WITH PEAS INGREDIENTS

3 Tbsp Margarine or Butter
3 Tbsp Flour
1 cup Milk
1/4 tsp Salt
1/8 tsp Pepper
1 Can Peas (drained)
 

SWISS CHEESE SAUCE INGREDIENTS

2 Tbsp Margarine or Butter
2 Tbsp  Flour
1 Chicken bouillon or 1 tsp instant chicken bouillon
1 cup Milk
1/2 cup Shredded Swiss Cheese

 

  1. In small pan dissolve bouillon in boiling water

  2. In Medium pan melt margarine and cook green pepper and onion until soft.  Then stir in flour until smooth.

  3. Add Bouillon liquid and milk and cook until thick stirring constantly for about 2 - 3 minutes.

  4. Add to ground turkey or chicken and add parsley and lemon.  Cover and chill well.

  5. With wet hands, shape into 8 (1 inch) balls or triangle shaped towers..

  6. Roll in bread crumbs and dip into egg and roll again in bread crumbs.  

  7. Fry a few croquette's at a time in oil at about 325 Degrees for 6 to 7 minutes or until nicely browned.   Serve with Sauce over them.  (I prefer the white sauce & peas
    NOTE: Bake croquettes 15 minutes at 350 degrees instead of frying to save calories

WHITE SAUCE WITH PEAS

Melt margarine and stir in flour until smooth.  Add milk gradually while stiring constantly.  reduce heat and cook 3 minutes longer.  Stir in seasonings and peas and heat thoroughly.

SWISS CHEESE SAUCE

Melt margarine and stir in flour and bouillon until smooth.  Add Milk and cook until bouillon dissolves and sauce starts to thicken.  Remove from heat and add cheese stiring constantly until cheese melts.
