Chicken Lasagna Rolls

2 cups ricotta cheese

1 1/4 cup shredded mozzarella cheese

1/4 cup parmesan cheese

1 egg

1 tsp garlic powder

1/4 cup fresh chopped parsley

1/2 tsp salt

1/2 tsp black pepper

2 cups shredded baked chicken (you can use store bought rotisserie chicken)

8 cooked lasagna noodles

1 1/2 cup tomato sauce (or your favorite spaghetti sauce)

 

 

  1. Preheat oven to 375º.

  2. Mix first 8 ingredients (reserving 1/4 cup mozzarella for later)

  3. Lay a large piece of plastic wrap on countertop.  Lay cooked lasagna noodles flat on plastic wrap.  Top each noodle with a layer of ricotta mixture and 1/4 cup chicken.

  4. Starting at one end, roll chicken up one noodle at a time .

  5. Fill bottom of baking dish with 1/4 cup sauce to prevent rolls from sticking.

  6. Lay rolls in bottom of pan with seam side down.  Cover with remaining sauce and sprinkle with 1/4 cup mozzarella cheese saved from earlier.

  7. Bake at 375º for 20 minutes
