Shrimp Pasta with Rosemary

1 lb. large shrimp (cleaned and devined)

1 lb pasta (linguine)

Shrimp Marinade

3/4 cup extra virgin olive oil

1/4 cup red wine vinegar

1/2 cup dry wine (red or white)

1 large lemon, chopped (using all the juice)

1 tbsp fresh rosemary

2-3 cloves minced garlic

Rosemary Herb Sauce

 

2/3 cup extra virgin olive oil

1/3 cup red wine vinegar

1/3 cup fresh lemon juice

1 cup chopped spanish olives

1/3 cup chopped mint

1 tbsp fresh rosemary

 

  1. Marinade shrimp in a bowl for 20-30 minutes

  2. Cook pasta according to the directions on the package

  3. Combine Rosemary herb sauce ingredients in a small bowl

  4. Place shrimp on wooden skewers and grill in medium-high for 2-3 minutes

  5. Remove shrimp from skewers after cooked and toss together with pasta and Rosemary Herb sauce.
