Potato Pancakes

4 large Potatoes, Peeled
1/2 cup Grated onion
Eggs (slightly beaten)
2 Tbsp Flour
3/4 tsp Salt
  Dash of Pepper
  Dash of Nutmeg
  Oil for frying  (I use Canola)
Optional:  Add about 1/2 tsp minced garlic.  

 

  1. Grate potatoes using medium grater.  Pat with a paper towel to drain very well.  Measure out 3 cups

  2. In a large bowl combine grated potatoes, onion, eggs, flour, salt, pepper and nutmeg.

  3. In large heavy skillet add oil to equal about 1/8 inch deep and slowly heat oil  until very hot but now smoking.

  4. For each pancake drop about 2 tbsp potato mixture into hot oil. 

  5. With spatula, flatten against bottom of skillet to make pancakes about 3-4 inches in diameter.  Be careful of spouting oil.  

  6. Fry for 2 or 3 minutes on each side or until golden brown.

  7. Drain well on paper towel.

  8. Serve alone or with your favorite topping.

Suggested Toppings:  applesauce, sour cream, maple syrup.   I use sour cream.
