Potato
Pancakes
Grate
potatoes using medium grater. Pat with a paper towel to drain
very well. Measure out 3 cups In
a large bowl combine grated potatoes, onion, eggs, flour, salt, pepper
and nutmeg. In
large heavy skillet add oil to equal about 1/8 inch deep and slowly
heat oil until very hot but now smoking. For
each pancake drop about 2 tbsp potato mixture into hot oil. With
spatula, flatten against bottom of skillet to make pancakes about 3-4
inches in diameter. Be careful of spouting oil. Fry
for 2 or 3 minutes on each side or until golden brown. Drain
well on paper towel. Serve
alone or with your favorite topping. Recipe from LastMinuteCooking.com
