Mashed Potato Bake

4 lb potatoes (12 medium)

1 (8az) pkg softened cream cheese

 cup sour cream

2 tsp salt

1/4 tsp pepper

1 clove garlic, crushed or garlic salt

1/4 cup chopped chives

1/2 tsp paprika (for baking)

1 Tbsp Butter (for baking)

   (grated cheese if desired)

                                                                                                                           

  1. Boil Potatoes; drain.  Mash potatoes with a little butter and milk

  2. Add cream cheese, sour cream, salt, pepper and garlic

  3. Beat at high speed until smooth and light

  4. Stir in chives and (grated cheese if desired)

  5. Keep heated in crock pot or spoon into ligthly greased 10 cup baking dish.

  6. Sprinkle with paprika and dot with butter

  7. Bake at 350º for 30 minutes or until lightly golden brown and heated through.
