Cook
rice according to package directions. Soak
raisins in boiling water 5 minutes; drain. Mix
rice and raisins with combined vinegar, oil, and thyme. Sprinkle
apples with lemon juice and stir gently into rice mixture. Add
olives, season with salt to taste, and chill. Just

thyme leaves (crumbled)
1 large
Eating apple -cored and slivered (peeled if desired)

Lemon Juice

Black Olives (chopped)
Salt
1 cup
Cheddar or Gruvere Cheese (diced)
