Harvest Salad

2 cups Cooked Barley
2 cups Frozen whole kernel corn (thawed)
1/2 cup Dried cranberries
1/4 cup Thinly sliced green onions (2 -3 medium)
1 medium Unpeeled apple (chopped (about 1 cup)
1 small  Carrot, coarsely shredded (about 1/s cup)
2 Tbsp Vegetable Oil
2 Tbsp Honey
1 Tbsp Lemon Juice

 

  1. Mix all ingredients except oil, honey & lemon juice in large bowl.

  2. Shake oil, honey & lemon juice in tightly covered container.

  3. Pour over barley mixture & toss.
