Orange Mint Rice Salad

 

Oranges
3 cups Cooked rice
1/3 cup Golden raisins
1/3 cup Fresh mint leaves (chopped)
1/2 cup Walnuts  (if allergic substitute almonds or other nut)
  Salt and pepper to taste

 

  1. Peel & segment two oranges, set aside.

  2. Squeeze orange; set aside. 

  3. In a large bowl, combine rice, orange segments, raisins, mint and walnuts

  4. Add orange juice; toss well.

  5. Salt & pepper to taste.
