Tabouli

     1 diced cucumber (remove seeds and pulp)
    
1-2 diced ripe tomatoes (drain excess liquid)
     2 c. dried couscous1 bunch of parsley, chopped
     3 green onions, chopped
     1 1/2 tsp. salt (or to taste)
     1/2 tsp. ground black pepper (or to taste)
     1/3 c. olive oil (or to taste)
      2 TBSP apple cider vinegar (or to taste) 
     
black olives (optional)
      crumbled feta cheese (optional)

 

Make the couscous according to the instructions on the package and let it cool.  For the cucumbers and tomatoes, it is important that you remove pulp and excess liquid, otherwise it comes out soggy. Mix the diced scallions, tomatoes, cucumbers in a bowl.  Add salt, pepper, vinegar, and oil, taste and adjust       seasonings.  Check that you don’t have too much liquid in the bowl, and drain the excess dressing if necessary.  Add parsley, couscous, olives, and feta.          Mix well.
