Quick Corn Chowder

1/2 cup Chopped Green Pepper
2 Tbsp Chopped onion
2 Garlic cloves (minced)
2 Tbsp Butter
2 cans -10-3/4 oz ea Condensed cream of potato soup (undiluted) or homemade
1 can - 14 3/4 oz Cream style corn
2 cups Milk
1 pkg - 3oz Cream cheese (cubed)
  Pepper to taste

 

  1. In large saucepan saute green pepper, onion and garlic until tender

  2. Stir in the soup, corn, milk, cream cheese and pepper.

  3. Bring to a boil stirring frequently.

  4. Reduce heat and simmer uncovered for 5 minutes or until cream cheese is melted.  

VARIATION:  Add chicken for Chicken Corn Chowder
