Sauerkraut Soup

1/2 lb dry or     1qt canned

Mushrooms (drained and chopped)

1 qt

Sauerkraut juice (ONLY JUICE)

3 qts

Water

1/2 lb

Small square flake noodles or lentils

1 Tbsp

Butter   (you can use vegetable oil if you want but it changes the flavor some)

1 small

onion (chopped)

1 Tbsp

Flour

 

Salt & Pepper

 

  

 

  1. Wash and dry mushrooms WELL in water (about 10 minutes if using dry mushrooms

  2. Mix sauerkraut juice and water in a pot and place over high heat

  3. Bring to a boil and add mushrooms and simmer about 1 hour.  (IF USING CANNED MUSHROOMS COOK ABOUT 1/ HOUR)

  4. Cook noodles and add to mushroom soup

  5. Heat butter and onions in a pan until golden brown.  Add flour and add to soup and mix well.

NOTE: This soup is a traditional Slovak Christmas Soup but I love it any time.      If the sauerkraut juice is hard to find save the juice from sauerkraut used and freeze until you have enough to use for soup.
