Crispy French Fried Mushrooms

1 cup All Purpose Flour

1 tsp Salt

1/2 tsp Baking Powder

1/8 tsp pepper

1 egg (separated)

1 tsp Sugar

1/3 cup Milk

1 Lb Fresh Mushrooms (the kind you find at a country stand -  cleaned)

5 cups Corn Chex cereal (crushed to make 1 2/3 cups)

 

Thoroughly mix flour, salt, baking powder and pepper.

Beat Egg white until foamy.  Add sugar and beat until stiff but not dry.

Beat yolk and milk together and blend in dry ingredients.

Fold in egg whites.

Dip mushrooms in batter and let excess run off.  Roll in Chex Crumbs.

Deep fry in hot oil (385º) until golden brown turning once.  Salt if desired.

Makes about 18-20 Mushrooms

Note: You may freeze the Mushrooms. To thaw heat unwrapped in 400º oven for 7 minutes.  Turn and heat 7 minutes longer.
