Broccoli Cheese Soup
1/4 C Chopped Onion
2 Tbsp butter or margarine (divided)
2 Tbsp flour
2 1/2 cups milk
3/4 lb (12 oz Velveeta cut up)
1 pkg (10 oz) chopped broccoli thawed and drained
1/8 tsp pepper
1. Cook and stir onion in 1 Tbsp butter in sauce pan on stovetop until onion is tender
2. Add remaining butter and flour and stir constantly cooking for 1 minute till hot and bubbly
3. Gradually add milk stirring constantly until well blended. Bring to boil and reduce heat to med-low and simmer for 1 minute
4. Add remaining ingredients and stir until Velveeta is completely melted and soup is heated completely through.
Makes about 6 cups
